Care in storing and defrosting duckling is critical to prevent food-borne illness. Frozen duckling should be stored at 0°F.

DEFROSTING

IN THE REFRIGERATOR: Whole birds may take 1 to 2 days. Never speed the process by leaving the duckling on the counter. Once defrosted, the duckling may be refrigerated for 1 to 2 days before cooking.
IN COLD WATER: Do not remove the packaging. Make sure packaging is airtight or place in a leak-proof bag. Submerge the bird in cold water, changing the water every 30 minutes.
IN THE MICROWAVE: Follow manufacturer’s instructions and plan to completely cook the duckling immediately after thawing. Do not refreeze without cooking.

ROASTING THE WHOLE DUCKLING

Preheat the oven to 350° F, remove giblets and trim excess fat.
Rinse and pat dry.
Gently prick the skin.
Truss legs loosely, if you prefer.
Spray roasting pan with cooking spray.
Place the bird, breast side up, on a rack in the pan.
Roast duckling for 25 to 30 minutes per pound. Baste with pan juices every 20 to 30 minutes.

The duckling is done when the legs move freely, the juices run clear and the internal temperature at the leg joint reaches 180°F as measured with a meat thermometer.

Simply The Best Duck that I ever Roasted in 50 years!
Served with Hungarian style Sweet and sour Red Cabbage and Boiled white rice seasoned with Butter and black pepper !
Purchased at Whole Foods Boston !
Highly will recommend to others!

Absolutely the very best duck breasts and legs. When I can get them at my local Whole Foods, I hoard them in my freezer. Prepared and served duck leg confit for our annual NYE dinner party this year – to rave reviews. The quality of the legs are as important (if not more) than the recipe. Pan seared breasts are unctuous and succulent. Perfect for a quick (and impressive) week night meal. I just wish your duck products were more regularly available to us

This was the best duck I’ve ever had. I made it every week during the period that Whole Foods had it.
Since then, nobody carries it (at least not in the greater Miami area).
Where can I purchase this – can I order directly from you?
