It’s amazing how bold and powerful this marinade is with just a handful of ingredients, including sumac, a deep red spice made from dried berries, commonly used in Middle Eastern cooking. Ingredients
- 1 Bell & Evans 8-Piece Cut Chicken
- 1 TB Salt
- 1 TB Sumac
- 1 Lemon, zested, plus 2 lemons, cut into wedges, for serving
- 3/4 tsp Black pepper
- 3/4 tsp Garlic powder
- 3 TB Olive oil, plus more for brushing grates
- 2 TB Chopped fresh parsely, for garnish
Preparation
- Mix the salt, sumac, lemon zest, pepper and garlic together in a small bowl. Rub oil and spice mixture over the chicken and under the skin until evenly coated.
- Preheat the grill to medium heat and brush grates with oil. Grill the chicken, skin-side-down, turning occasionally, until golden-brown and internal temperature reaches 165°F, about 10-25 minutes. Dark meat will require a longer cooking time than white meat. Allow to rest for 5 minutes. Garnish with parsley, and serve with lemon wedges.
