High-Protein Avocado Toast

Classic avocado toast is already full of healthy fats and fiber. Our recipe takes good-for-you avo toast to a new level, adding a major protein boost from savory Bell & Evans Breakfast Chicken Sausage Patties, plus crunch and tang from a refreshing mix of veggie quickles (quick + pickles). Use any leftover brine to make your own quickles from any veg you have on hand ̶̶ they keep refrigerated for up to two weeks!

Ingredients

  • 8 Bell & Evans Breakfast Chicken Sausage Patties
  • 2 cups White vinegar
  • 1 cup Granulated sugar
  • ½ cup Kosher salt
  • 1 cup Wide carrot ribbons
  • 1 cup Thinly sliced red onion
  • 2 Avocados
  • 2 tsp Lemon juice
  • Pinch of Salt
  • 4 Slices hearty whole grain bread
  • 2 Large radishes, thinly sliced
  • ¼ cup Crumbled goat cheese
  • 2 tsp Everything bagel seasoning

Preparation

  1. Combine vinegar, sugar, and salt in a small saucepan and bring to boil over high heat, stirring until sugar and salt dissolve. Set brine aside to cool slightly. Add carrot ribbons and sliced onion to a medium heatproof glass bowl or pack into a heatproof jar, and pour brine over vegetables until veg are just submerged. Cover and refrigerate for at least 15 minutes or up to 2 weeks.
  2. Preheat air fryer to 400°F. Place the frozen sausage patties in the air fryer basket. Cook for 13-15 minutes, flipping the patties after 6-7 minutes, until the internal temperature reaches 170°F. Repeat with remaining sausage patties.
  3. In the meantime, halve and pit the avocados. Use a large spoon to scoop out the avocado flesh and place it in a medium bowl. Mash with a fork until avocado is spreadable, but still slightly chunky. Stir in lemon juice and pinch of salt.
  4. Toast bread and assemble avocado toasts. Spread each toast with one quarter of the mashed avocado mixture. Layer pickled carrot ribbons, sliced onions, and radish slices on top of avocado. Top each toast with 2 sausage patties. Sprinkle each toast with one quarter of the crumbled goat cheese, and finish with a generous sprinkle of Everything bagel seasoning.
