Chicken Oysters

Chicken Oysters are two circular-shaped, small pieces of dark meat on the back of the chicken’s thigh, near the backbone.
When birds are cooking, the juices are pulled to the center of the chicken. This means the oyster roasts in the natural juices and is protected from scorching temperatures because it hides inside the body. Thus, the infamous “oyster” is described as the best part of the chicken.

Benefits

Juiciness – The fat and location of this cut allows for it to be the most juicy.

Boneless – This cut is boneless for your cooking convenience.

Flavor – Because this piece is surrounded by bone in the center of the bird, it absorbs plenty of natural flavor.

Premium – Chicken oysters are a hidden gem! Their rich flavor and tender texture make them the most succulent part of the bird.

  • No Hexane
Most poultry producers use hexane-processed soybeans as a cheap source of chicken feed. But hexane pollutes the air and environment. We keep chemicals out of our feed.
  • No DDGS
DDGS is a protein alternative producers can get at a lower cost than corn. Antibiotics are used to control bacteria in the fermentation process. Some antibiotics remain in the DDGS. We use only corn and soybeans for protein. Period.
  • 100% Air Chilled
Our air chill method eliminates the need for chilled chlorinated water that most producers use, which ends up in your chicken.
  • No Hormones
This product is free from artificial growth hormones.
  • No Junk
This product is made with no fillers, no preservatives and no artificial flavors—in other words, no junk.
  • No Antibiotics

    1. Currently, we are selling them at Central Market in Texas. However, you may be able to ask your Meat Manager to order some for you as a special order.

I was introduced to chicken oysters 60 years ago by my mom. It was our secret as there were only two for a fairly large family. Are these available in Arizona (specifically Tucson). If not any idea how to get ahold of them. I am also looking for turkey oysters. What a Thanksgiving feast that would be.
