Sage Chicken Sausage, Potato and Pepper Breakfast Bake

A crowded table at breakfast or brunch is usually a lively occasion; but cooking for extra guests, especially first thing in the morning, isn’t quite as fun. This conundrum is easily solved with an everything-in-one-dish breakfast casserole that just requires 10 minutes of prep. As the peppers, potatoes and Bell & Evans Country Breakfast Chicken Sausage with Sage bake, their flavors meld together in a savory harmony. Serve with a green salad and toast, or a side of eggs, for a filling meal!

Ingredients

  • 1 Pkg Bell & Evans Country Breakfast Chicken Sausage with Sage
  • 1 1/2 lb Red potatoes, cut into 1/2-inch pieces
  • 1/2 small Red onion, cut into 1/2-inch pieces
  • 3 TB Olive oil
  • 2 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Paprika
  • 1 small Red bell pepper, cut into 1/2-inch pieces
  • 1 small Green bell pepper, cut into 1/2-inch pieces
  • 2 TB Chopped fresh parsley, for garnish

Preparation

  1. Preheat oven to 425°F. Combine the potatoes, onions, oil, salt, pepper and paprika in a 9x13-inch baking dish and toss to combine. Bake, fl ipping the potato mixture halfway through, until it just begins to brown, about 25 minutes. Reduce temperature to 350°F.
  2. Add the bell peppers and toss to combine. Top the vegetable mixture evenly with the sausage. Bake until the potatoes and vegetables are tender and the sausage is golden-brown and internal temperature reaches 165°F, about 14-18 minutes. Garnish with the parsley and serve.
