One-Skillet Italian Chicken Sausage, Peppers and Onions Pasta

This crowd-pleasing pasta dish takes inspiration from a loaded Italian sausage sandwich and turns it into a new weeknight classic! Bell & Evans Mild Italian Chicken Sausage and beautifully caramelized onions and peppers are the perfect pairing. For an extra boost of flavor, the pasta is cooked in Bell & Evans Organic Chicken Broth (a classic chef’s trick!). Once it’s done, the pasta is tossed with the cooked veggies, Parmesan and fresh basil, then topped with the sausage for a tantalizing presentation.

Ingredients

  • 1 Pkg Bell & Evans Mild Italian Chicken Sausage
  • 2-3 cups Bell & Evans Organic Chicken Broth, warmed
  • 2 TB Olive oil, divided
  • 1 each small Red, and green bell peppers, cut into 1/4-inch slices
  • 1 small Red onion, cut into 1/4-inch slices
  • 2 cloves Garlic, minced
  • 1 (14.5-oz) can Diced tomatoes, drained
  • 8 ounces small Shells pasta
  • 2 tsp Salt, plus more, to taste
  • 1/4 cup grated Parmesan cheese, plus more, for garnish
  • 1/2 tsp Black pepper, plus more, to taste
  • 2 TB Chopped fresh basil, plus more, for garnish
  • 1/4 tsp Crushed red pepper fl akes, plus more, for garnish

Preparation

  1. Heat 1 tablespoon of oil in a large straight-sided skillet over medium heat. Add the sausage and cook, flipping occasionally, until golden-brown and internal temperature reaches 165°F, about 20 minutes. Transfer to a plate and set aside.
  2. Heat the remaining oil in the same clean skillet over medium heat. Add the peppers and onions, and cook, stirring occasionally, until tender, about 3-5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Season with salt and pepper, to taste. Transfer to the same plate as the sausage and set aside.
  3. To the same skillet, add 2 cups of the broth, tomatoes, pasta, salt and pepper. Cover and bring to a boil. Cook, stirring occasionally, until the pasta is tender, and liquid has reduced and formed a sauce, about 12-15 minutes. Add more broth, as needed, until pasta is fully cooked.
  4. Add the cooked peppers and onions, Parmesan and basil, and toss to combine, about 1-2 minutes. Top the pasta with the sausage. Garnish with additional Parmesan, basil and crushed red pepper flakes. Serve and enjoy.
