Italian Chicken Sausage, Sweet Potato and Corn Sheet-Pan Dinner

One pan = zero stress! This smart recipe takes all the fuss out of supper: simply-seasoned sweet potatoes, onions, Bell & Evans Mild Italian Chicken Sausage, tomatoes and corn are roasted on the same sheet pan until perfectly tender. Serve them with a three-ingredient dipping sauce for a high-protein, gluten-free meal in a snap.
Ingredients
- 1 pkg Bell & Evans Mild Italian Chicken Sausage
- 2 medium Sweet potatoes, cut into 1/2-inch wedges
- 1 small Red onion, cut into 1/2-inch wedges
- 3 TB Olive oil
- 2 1/2 tsp Salt
- 1 tsp Black pepper
- 1 tsp Paprika
- 2 cups Cherry tomatoes
- 3 ears Corn, husks removed and cut into 2-inch pieces
3 Ingredient Sauce
- 1/2 cup Sour cream
- 1/4 cup Whole-grain mustard
- 2 tsp Hot sauce
Preparation
- Preheat oven to 450°F. Toss the potatoes, onions, oil, salt, pepper and paprika together in a medium bowl until well-coated. Arrange the potato mixture on a rimmed baking sheet. Bake for about 10-15 minutes, until it just begins to brown. Remove from the oven and reduce temperature to 350°F.
- Flip the potatoes and onions over. Arrange the sausage links, tomatoes and corn in a single layer around the potatoes.
- Continue to bake until potatoes are golden-brown, vegetables are tender and sausage is golden-brown and internal temperature reaches 165°F, about an additional 20-24 minutes.
3 Ingredient Sauce
- Meanwhile, combine the sour cream, mustard and hot sauce in a small bowl. Serve sausage and vegetables with sauce and enjoy.
