Grilled Firecracker Chicken Kabobs

Enjoy some sweet heat this summer with our recipe for Grilled Firecracker Chicken Kabobs. Seasoned skewers of juicy chicken breast are grilled and basted with a sweet-and-spicy firecracker sauce that will keep you coming back for more. Ready in under 30 minutes, this is sure to become a summertime favorite.
Ingredients
For the Chicken
- 2 Pkg Bell & Evans Boneless Skinless Chicken Breast Cubes
- 2 TB Olive oil, plus more for brushing grates
- 2 tsp Salt
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- 1/2 tsp Chili powder
- 1/2 tsp Black pepper
For the firecracker sauce
- 1 cup Mayonnaise
- 2/3 cup Sweet chili sauce
- 2 TB Honey
- 1 TB Sriracha sauce
- 2 Green onions, thinly sliced, for garnish
Preparation
- For chicken: Place chicken in a large bowl. Add the olive oil, salt, garlic powder, paprika, chili powder and pepper, and massage the spice mixture into chicken to cover completely. Thread chicken evenly on 8 metal skewers.
- For firecracker sauce: Whisk mayonnaise, sweet chili sauce, honey and sriracha together in a small bowl until combined. Set aside 1/2 cup for serving with chicken.
- Heat grill over medium heat and brush grates with oil. Grill chicken, brushing with remaining firecracker sauce, and turning occasionally, until golden-brown, or until internal temperature reaches 165°F, as measured by a meat thermometer, about 6-10 minutes.
- Garnish chicken with cilantro and serve with reserved firecracker sauce.
- Tip: Serve with a green or purple cabbage sesame slaw to create a balanced meal!!
