This may very well be the last gravy recipe you ever need — we’re talking the kind of recipe that family members pester you for after the dishes have been cleared. It hits every note you want from chicken gravy: Incredibly smooth and deeply savory, it perfectly complements roast chicken and pretty much every kind of vegetable. The secret ingredients are brown butter, which brings rich toasty notes, Bell & Evans Organic Chicken Bone Broth, which adds a concentrated layer of umami flavor, and fresh sage, with its peppery, woodsy herbaceousness.

Ingredients

  • 3 cups Bell & Evans Organic Chicken Bone Broth
  • 1/4 cup Unsalted butter
  • 1 small Shallot, minced
  • 1 clove Garlic, minced
  • 1/4 cup All-purpose flour
  • 2 1/2 tsp Chopped fresh sage
  • Salt & Pepper, to taste

Preparation

  1. Melt the butter in a medium saucepan over medium heat. Cook, stirring frequently, until butter is golden-brown and fragrant, about 3-4 minutes. Reduce heat to medium-low. Stir in the shallots and garlic, and cook until fragrant, about 10 seconds.
  2. Stir in the flour, and cook until no lumps remain and a thick paste forms. Continue cooking, stirring frequently, until the flour mixture is light golden-brown and smells like toasted nuts, about 2 minutes.
  3. Increase heat to medium-high. Slowly whisk in the broth and cook, whisking constantly, until gravy thickens, about 2-3 minutes. Reduce heat to medium-low. Stir in the sage and simmer, stirring occasionally, until flavors develop, about 20 minutes. Season with salt and pepper, to taste. Keep warm until ready to serve.
