Everything Bagel Sausage Eggs Benedict

If you learn to make hollandaise sauce, there’s no need to go out for eggs benedict—you can whip them up right at home! The sauce’s luscious, silky texture comes from emulsified egg yolks, melted butter and mustard, with a dash of lemon juice and hot sauce for brightness. Use it to top this everything bagel-inspired eggs benny, with bagels in place of English muffins, Bell & Evans Chicken Breakfast Sausage Patties for heartiness, fresh veggies and a sprinkling of “everything” seasoning. It’s a restaurant-worthy meal you can make any time!

Ingredients

Hollandaise Sauce

  • 3 large Egg yolks
  • 1/4 tsp Dijon mustard
  • 1/2 Lemon, juiced
  • 1/8 tsp Red pepper hot sauce
  • 1/2 cup Unsalted butter, melted and kept hot
  • Salt, to taste

For Sandwich

  • 1 Pkg Bell & Evans Chicken Breakfast Sausage Patties
  • 3 Everything bagels, split and toasted
  • 1 Plum tomato, sliced
  • 1 cup Baby arugula
  • 1 Avocado, halved, pitted, peeled and sliced
  • 2 tsp Everything-but-the-bagel seasoning
  • 1 TB Chopped fresh chives

Preparation

  1. Combine egg yolks, mustard, lemon and red pepper hot sauce in a blender. Cover with lid and remove center cap. Blend until egg mixture is smooth and light in color, about 10 seconds. With the motor running, slowly pour in hot melted butter until sauce thickens. Season with salt, to taste. Set aside.
  2. Meanwhile, heat oil in a large skillet over medium heat. Add sausage patties and cook, flipping occasionally, until golden-brown and internal temperature reaches 170°F, about 10-12 minutes. Keep warm until ready to serve.
  3. Fill a small pot with water and vinegar and bring to a simmer. Break eggs into the water and poach until whites are set and the yolk is still runny, about 3 minutes. Transfer to a paper-towel-lined plate.
  4. Top bagel halves evenly with tomatoes, sausage patties, arugula, avocado and poached eggs. Drizzle with hollandaise, and garnish with bagel seasoning and chives. Serve and enjoy.
  5. Tip: Feel free to air-fry or bake sausage patties according to the package directions.
