Description

A quick and easy party platter you can pull together in less than an hour!

Ingredients

1 pk
gluten free Bell & Evans breaded chicken breast tenders
1 pk
gluten free Bell & Evans breaded chicken breast nuggets
1  
English-style cucumber peeled and thinly sliced
2 c
greek yogurt
1⁄4  
small red onion (finely chopped)
1 t
ground coriander
1  
lime zest and juice
1 oz
lemon zest and juice

Instructions

Bell &; Evans Nuggets and Tenders:

1 Box Gluten Free Bell &; Evans Breaded Chicken Breast Tenders
1 Box Gluten Free Bell &; Evans Breaded Chicken Breast Nuggets

Bake according to package directions. Keep warm.
 

Serve with your favorite salsa or dipping sauce.  Here’s one of ours:

Tzatziki Sauce

 * 1 English cucumber, peeled, grated and squeezed dry, reserving the liquid and flesh separately
*  2 cups Greek style yogurt
*  1/4 small red onion, finely chopped
*  1 teaspoon ground coriander
*  Zest and juice of 1 lemon
*  Zest and juice of 1 lime
*  Salt and pepper to taste
   
In a bowl, combine the grated cucumber flesh, yogurt, red onion, coriander, lemon and lime juices. Season with salt and pepper. If the sauce is too thick, use some of the reserved cucumber juice to thin it out a bit.
