One of our favorite ways to cook a
Natural Bell & Evans Whole Turkey
Pre-heat oven to 425 degrees Rinse the turkey inside and out then pat dry stuff and truss. Cut cheesecloth to a length that will cover the turkey and unfold to a single thickness. Melt 1/2 lb. of butter in a small saucepan and add 1/2 tsp. each of dried sage thyme marjoram and crushed rosemary. Place cheesecloth in the pan and completely saturate (alternatively brush skin with herbed olive oil and baste every 15 minutes).
Place turkey breast side up on a rack in a shallow roasting pan. Add 1/4 cup of water and 1 quartered onion to the roasting pan. Place turkey in oven and reduce heat to 325 degrees. After 15 minutes drape butter soaked cheesecloth over the bird so that it is completely covered. After an hour baste the turkey every 15 minutes or so to keep the cheesecloth moist. Remove the cheesecloth for the last 30 minutes of cooking time for crisp skin. Allow the turkey to sit for at least 20 minutes before carving.
Roasting Chart - Roast at 325 degrees in Uncovered Pan Weight Roasting Time 8-12 lbs. 2-3 hours 12-16 lbs. 3-4 hours 16-20 lbs. 4-5 hours 20-24 lbs. 5-6 hours
Add 1/2 hr. for Stuffed Turkeys
Important: Each time an oven door is opened valuable roasting time is lost.
